Roasted Pecans - A Delicacy You’re Sure to Enjoy!

Roasted pecans… probably one of the best holiday treats ever - that salty pecan taste bursting with flavor. I remember when I was growing up, sitting around on holiday occasions talking and visiting with family and friends – there was always roasted pecans. When I smell them roasting in the oven and when I take a bite it always makes me think of fond holiday memories. Aren’t the holidays the best time of year? They certainly are my favorite – time to spend with family and friends. Plus, there’s always an abundance of great food during the holiday season. What more could you ask for, really?

I love the taste of pecan – being from the south it’s a given. You can just do so much with them – make them into pies, cakes, cookies, candy….You can add them to so many of your foods and desserts, but sometimes a really good lightly salted roasted pecan is so simple and so good. I love to take them and heat them up just a bit and eat them warm – makes the flavor seem that much more intense.

My grandmother always made roasted Pecans, and we enjoyed them so much! She took big plump pecan halves and lightly roasted and salted them. But on special occasions – and in the cooler months, she’d spice them up with cinnamon or nutmeg. They were so delicious. I would eat them by the handfuls. I would wake up to the smell of roasted pecans with cinnamon and sugar.

And they were so easy to make:

• 1 egg white

• 1 tablespoon water

• 2 1/4 cups pecan halves

• 1/2 cup white sugar

• 1/4 teaspoon salt

• 1 1/2 teaspoons ground cinnamon.

Preheat oven to 225 degrees F (105 degrees C). Lightly grease a rimmed baking pan. Combine the egg white and water in a mixing bowl; beat until fluffy. Fold in the pecans to coat evenly. Combine the sugar, salt, and ground cinnamon in a shaker or cup with a lid. Dust the pecans evenly with the sugar mixture. Spread the nuts over the prepared pan. Bake in preheated oven until toasted and fragrant, stirring every 15 minutes, about 1 hour. Cool on pan, and store in an airtight container.

We never had to worry much about the airtight container at our house because the roasted pecans never stayed around long enough to be stored. One thing that I love about roasted pecans also is that they blend so well with other nuts. I take the roasted pecans and mix them with roasted cashews and eat them straight out of the tin. Or even add a bit of praline bit pecans to them for a salty and sweet combination.

Speaking of roasted pecans being used as ingredients in recipes, have you ever tasted a pecan spice cake with cream cheese frosting? There are no other words for it but delicious and luscious. It combines several traditional southern tastes: pecans, spices, and cream cheese frosting. So yummy! And can be either served at a family dinner or an elegant party.

CAKE:

• 1 1/2 sticks (3/4 cup) unsalted butter, cut into 1-inch pieces and softened, plus additional for buttering pans

• 2 3/4 cups cake flour (not self-rising)

• 2 teaspoons baking powder

• 1 teaspoon baking soda

• 3/4 teaspoon salt

• 1 tablespoon ground cinnamon

• 1 1/4 teaspoons freshly grated nutmeg

• 1 teaspoon ground ginger

• 1/2 teaspoon ground allspice

• 1/4 teaspoon ground cloves

• 1 1/2 cups packed light brown sugar

• 3 large eggs at room temperature 30 minutes

• 1 1/2 teaspoons pure vanilla extract

• 1 1/2 cups sour cream

• 3 / 4 cup roasted pecans – finely chopped

FROSTING:

• 3 (8-ounce) packages cream cheese, softened

• 1 1/2 sticks (3/4 cup) unsalted butter, softened

• 1 tablespoon finely grated lemon zest

• 3 3/4 cups confectioners sugar (from a 1-pound package)

• 1 tablespoon fresh lemon juice

• 1 1/3 cups roasted pecans - finely chopped.

Electrohydraulic scissor lifts are some of the most powerful, heavy duty material handling tools used by major factories, power plants, government facilities, and service centers. These products are needed for loads that weigh anywhere from 15,000 LB up to 120,000 LB. Like all scissor lifts, electric hydraulic units are built to keep heavy materials at a stable, consistent elevation for safe access and efficient operations to be performed. They are routinely employed by telephone companies, lumber companies, and air craft engine companies to elevate materials for manipulation, moving, or service work.

Motors are controlled from an up/down push button control on the end of a 20 ft cord. Every motor includes an adjustable upper travel limit switch that automatically shuts off the motor and pump at the desired pre-set height. Two secondary, mechanical upper travel back-up stops provide an additional safeguard against over extension.

When necessary, workers can also stand on hydraulic scissor lifts safety. The platforms are supported by rectangular structural tube scissor legs and torque tubes that stabilize horizontal and longitudinal centers of gravity and minimize deflection when the unit is supporting huge loads and workers are moving around on the platform. Toe guards along the edges of the platform add a standard, yet very important, safety buffer against accidental slips and falls.

Instead, follow these simple rules below to start your journey toward big muscles the healthy way.

Rule #1

You need to eat more than three meals a day. You should eat your first meal within a half hour of waking up. By eating only three times a day, that would lead to massive quantities of carbs, protein and fat that you body just can’t use up. These extra calories turn into fat. Instead, you should be eating every two to three hours because you are only giving your body the amount of energy it needs in one sitting. Your body is using the amount of calories sufficient to fuel cell growth and not storing many in the form of fat.

Rule #2

Of course, you need to be packing on protein but an often overlooked part of the diet is vegetables. At every meal throughout the day you should be consuming vegetables. Vegetables are high in antioxidants and help heal the damage done to the cells through heavy lifting. Also, proteins create high levels of acid in the blood so it is important to balance the pH with fruits and vegetables. Try to eat 1-2 cups of vegetables per meal.

Rule #3

You can never pay enough attention to what your body is telling you. You could read every muscle gain and bodybuilding book out there and still it needs to be tweaked to fit your personal body. Trial and error is the best way to learn what is working for you individually. If you are on a 3 or 4 thousand calorie diet and you’re getting stronger but you are noticing a little more fat as well, then lower your intake 500 calories. Do this until you have reached the optimal results for what you are trying to accomplish.

Rule #4

Perseverance. You cannot start a new program and expect to see dramatic changes a month into it. I see too many new people in the gym try out a routine for a couple weeks, grow discouraged by not seeing the gains they expect, and then try the next hottest craze from the bodybuilding magazines. Any program you start needs to be given a minimum of 12 weeks to see if it is going to work for you.

An easy guide to live by if you are an average male around 200 pounds is to consume 40-60 grams of protein per meal, 60-80 grams of carbs per meal, and 20-30 grams of fat per meal. Stick to this while eating 6 meals per day and giving a full effort while lifting and you will be adding lean muscle mass in no time.

1) Don’t Despair, Prepare!

First, and most importantly, know that sometimes it’s best to walk away from conflict. Know your ‘exit point’ -– the point at which it makes more sense to walk away from a conflict than it does to work to manage the issue. There are times that it will be your best option.

Everyone has their own style of dealing with conflict. Understand the different styles, identify yours and the styles of your team. Learn to appreciate the diverse styles of others, assume leadership when conflicts arise, and value the creative spark that conflicts can kindle.

2) Follow the Yellow Brick Road

What is your goal? If you can agree on a common goal – to creatively solve a problem, to generate a new idea or to sell more product -– you’ll have a better chance of harnessing the conflict. Sometimes the root of a conflict is that you don’t even agree on what the problem is -– or that you’re struggling to address different issues.

3) Reveal, Don’t Conceal

You must agree -– at least some extent -– to be vulnerable, to reveal why you want something, and to declare what’s really important to you about an issue. When we’re in conflict, we always have a story – usually one that justifies our proposed solution. Listen and try to understand the other person’s story. If the other person won’t reveal their needs or interests, ask open-ended questions and look for clues.

4) Tackle the Problem , Not the Person

Focus on the problem and persuade the other person to join you in solving the problem. Make the problem your common enemy rather than blaming the other person for causing the problem. Try and discourage conflicts from becoming personal.

5) Play Within Bounds

Sometimes conflicts are caused by process problems rather than substantive issues. If the other person remains difficult, start talking more about standards and procedures than about the problem. This can help you creatively manage a conflict that seems like an unmovable object.

6) Stir Up a Storm

Brainstorm — welcoming all suggestions — then sort through them all and determine which ones merit further study. Many of us fall in love with our solutions and decide that our idea is the only possibility. The best resolution for all concerned may not be the one we had previously discussed.

7) Take a Time Out

Classic advocates of creative conflict management have used this move throughout history. Martin Luther King Jr. suggested we “go to the mountain” during conflict to gain the higher ground and a better perspective on the problem. Gandhi retreated to meditation and fasting during the most intense periods of his struggle to free the Indian people. When things get heated or stalled consider taking a time out to regroup.

8) Talk Until You Drop

People don’t allow enough time for creative conflict management. In our modern, instantaneous world we have lost our patience. If you have decided the conflict is worth your time and energy, make sure you allow sufficient time for management. It usually takes longer than we think to produce good fights instead of bad ones.

9) Circle the Wagons

When you reach an agreement or a creative solution, you need to go through some sort of closure process. Arrange a time in the future to review how the solution is working. Agree upon an action plan to accomplish the goals of an agreement and decide who does what, when and where.

10) Write to Avoid New Fights

Write down what you think you’ve agreed upon at various stages. The process helps clarify your own thinking as well as the agreement. We all tend to assume the meaning we ascribe to a certain word or discussion is the same for everyone. This one act will save you a world of hurt down the road.

These ten steps can provide a roadmap to lead you skillfully through using conflict to generate creativity. While you may not need to use all ten for every situation, it’s good to review them before you try to resolve an issue. Then, you’ll be able to see where you’re stuck and what you need to do to move forward. For complex disputes, you may very well need to work your way through all the steps with all the parties.
